As a Demi Chef de Partie - Butchery, you’re not just preparing, portioning, and overseeing the quality of meat and poultry products to the highest culinary standards, you're spreading the light and warmth of hospitality by delivering exceptional dining experiences that create memorable moments for every guest. Responsibilities Here's what you'll do during a typical day: • Prepare and portion meats: Receive, inspect, trim, portion, and prepare meat, poultry, and seafood according to hotel standards, recipes, and production requirements. • Support butchery operations: Assist in overseeing daily butchery activities, ensuring product quality, yield control, and timely preparation for all kitchen outlets and banquet operations. • Supervise and support junior team members: Guide Commis Chefs and kitchen assistants within the butchery section, providing training and support as needed to ensure efficient operations. • Maintain food quality and storage standards: Monitor product freshness, ensure proper labeling, storage, and stock rotation procedures, and minimize waste through effective inventory control. • Maintain cleanliness and hygiene: Keep all work areas, tools, equipment, and refrigerated storage areas clean, organized, and compliant with food safety standards. • Uphold health and safety regulations: Follow all HACCP, food safety, sanitation, and workplace safety procedures to ensure the highest standards of guest and team member wellbeing. • Support guest satisfaction: Contribute to delivering exceptional dining experiences by ensuring all meat and poultry products meet the highest standards of quality, consistency, and presentation.
