Key Responsibilities • Take full ownership of the kitchen, developing seasonal menus that honour Japanese culinary tradition while bringing creativity and flair to the concept. • Set and uphold the highest standards of quality, consistency, and presentation across every dish and every service. • Lead, mentor, and inspire the kitchen brigade, building a strong team culture and developing talent at every level. • Take charge of purchasing, stock control, and supplier relationships, ensuring exceptional produce while keeping waste to a minimum. • Own the kitchen's financial performance, managing food costs and driving efficiencies without ever compromising the guest experience. • Champion food safety and hygiene standards, keeping the kitchen audit-ready at all times. About You • Proven experience in Izakaya and Omakase concepts. • A background in luxury hospitality and high-end dining environments, ideally within luxury hotels. • Formal culinary training from an accredited culinary school, with a completed apprenticeship and chef training. • Strong leadership and people management skills, with the ability to lead a fast-paced restaurant operation. • A natural collaborator who builds strong relationships with stakeholders across the operation.
