About The Job Based at the Emirates palace Mandarin Oriental, Abu Dhabi within the Culinary Department, the Executive Pastry Chef is responsible for the entire pastry and bakery production of Emirates Palace Mandarin Oriental, Abu Dhabi, the proper efficiency and profitable functioning of the pastry department, ensuring that all functions are provided in the highest food quality, consistent with cost control and profitability margins. All work is carried out in line with the hotel’s guidelines, the departmental business plan and hotel corporate guidelines and service concepts. Enforces the highest standards of sanitation and hygiene. Supports the Executive Chef actively in creating modern and guest related banquet and a la carte menus. Further responsible for running the pastry department with creativity and innovative way by introducing new dishes and products on the market. The Executive Pastry Chef reports to the Executive Chef. As the Executive Pastry Chef, you will be responsible for the following duties: • Coordinates closely with the Executive Chef in determining quality and quantity of daily food products to be purchased and prepared. Informs the Executive Chef immediately for out-of-stock items or none delivered food products • Discusses with the Executive Chef and recommends menu price adjustments when necessary. Determines selling prices of unlisted food items • Reports to Executive Chef all staff matters, recommends promotions, transfers and all staff related points • Checks with maintenance that all kitchen equipment is functioning properly, tries to prevent damage or loss of equipment. (Instructs staff on how to use kitchen equipment properly) • Staff planning according to occupancy level and business forecast • Actively involved with suppliers to procure the best available pastry and bakery products on the market and to use them innovatively • Attends the daily kitchen briefings • Supervises all pastry & bakery staff to the best knowledge • Ensures the highest standard of hygiene in the entire pastry and bakery section • Controls the staff attendance of all pastry and bakery employees • Prepares all pastry and bakery products in accordance to given hotel standards and procedures • Must be highly cost conscious and constantly involved in efficient pastry production and waste control • To be responsible for all inter kitchen transfer for banquet and all a la carte restaurants or food outlets • Always maintains a friendly and pleasant image. Always checks personal hygiene and grooming standards and leads by example. Always wears a clean and tidy uniform. • To be familiar with the emergency procedure of the hotel • Coordinates with banquet and colleagues EO, material list and event orders • Works hands on in all aspects of the operation • Acknowledges and screens daily work schedules of pastry & bakery team • Conducts daily briefing and de-briefing of staff members • Communicates effectively with guests, subordinates, immediate supervisors and other section heads • Assists in budgetary and payroll expense control as required As Executive Pastry Chef, We Expect From You • Experience in a high volume internationally recognized luxury hotel chain and a minimum of three years in a similar position, resort experience will be a plus • Bachelor's degree in culinary arts or relevant field • Must have full knowledge of sanitation requirements in handling food • High level of creativity, specialized knowledge in international cakes and pastries, sugar work, chocolate work, wedding and specialty cakes, up to market bakery products • Strong leadership quality, training techniques, excellent communication and organizational skills Our commitment to you • Learning & Development. Requirements

  • As Executive Pastry Chef, We Expect From You
  • - Experience in a high volume internationally recognized luxury hotel chain and a minimum of three years in a similar position, resort experience will be a plus
  • - Bachelor's degree in culinary arts or relevant field
