Job Title: Chef De Partie (CDP) – Asian Cuisine Department: Culinary Location: Meals on Me, Al Quoz, Dubai Reports To: Sous Chef Vacancy: 1 Primary Objective To lead the Asian cuisine station with technical precision, ensuring that all dishes meet strict quality, portioning, and macronutrient targets. The CDP is responsible for managing daily "mis en place," overseeing the Commis team, and ensuring that every Asian-inspired meal prepared reflects the brand's commitment to healthy, high-quality, and authentic-tasting food in a high-volume delivery environment. Key Responsibilities • Culinary Execution: Lead the preparation of a diverse Asian menu (e.g., stir-frys, curries, steamed dishes, and cold preparations). Maintain consistency in flavor profiles, heat levels, and textures across all production cycles. • Operational Leadership: Manage the station’s daily workflow. Supervise and mentor Commis chefs, ensuring they follow standardized recipes and prep lists to meet dispatch deadlines. • Macro & Nutritional Precision: Strictly follow standardized recipes to ensure every meal aligns with specified caloric and macronutrient targets. Conduct precise weighing and portioning for all ingredients to guarantee accuracy in every container. • Production Efficiency: Oversee the operation of industrial kitchen equipment (woks, steamers, range tops) to maximize output without compromising quality. Monitor waste and optimize ingredient usage. • HACCP & Quality Control: Enforce strict adherence to ISO and HACCP food safety standards. Maintain an immaculate workstation, conduct daily temperature checks, and ensure proper FIFO stock rotation to maintain food integrity. • Cross-Functional Collaboration: Coordinate with the Packaging & Guest Experience team to ensure that the presentation of Asian dishes meets the "Meals on Me" quality standards before dispatch.
