Job Title: Demi Chef De Partie (DCDP) – Pastry Department: Culinary (Bakery & Pastry) Location: Meals on Me, Al Quoz, Dubai Reports To: Sous Chef Vacancy: 1 Primary Objective To support the pastry station in the consistent production of high-quality desserts, pastries, and confectionery items. The DCDP will work under the guidance of the Chef De Partie to ensure that all sweet offerings meet the brand’s aesthetic and quality standards, while maintaining strict adherence to HACCP food safety protocols in a high-volume production kitchen. Key Responsibilities • Production Excellence: Execute the preparation, baking, and finishing of a variety of desserts, cakes, and sweet treats according to standardized recipes. • Station Management: Assist in maintaining the pastry "mis en place." Ensure all raw ingredients and finished goods are organized and stored correctly to facilitate a smooth production flow. • Quality & Consistency: Perform daily quality checks on all pastry items to ensure they meet visual and taste benchmarks. • Inventory & Hygiene: Monitor ingredient stock levels for the pastry section, ensuring proper stock rotation (FIFO) and minimizing wastage. Maintain an immaculate workstation at all times. • HACCP Compliance: Strictly adhere to ISO and HACCP food safety standards. Keep accurate records of temperature logs for ovens, chillers, and freezers. • Equipment Care: Operate and maintain all pastry-related equipment (mixers, proofers, ovens, blast chillers) with care, ensuring they are cleaned and sanitized according to established procedures. Requirements
