Head Waiter (Captain) Fine Dining

The Head Waiter (Captain) leads the service team in delivering polished, personalized dining experiences in a luxury setting. Through impeccable table presentation, refined etiquette and attentive leadership, you will uphold the prestige and reputation of the venue with every service.

Department: Food & Beverage | Reports to: Bar Manager / F&B Supervisor

Type: Full-time, shift-based (evenings, weekends, holidays) | Location: Abu Dhabi, UAE

Key Responsibilities

• Lead the floor: Run pre-service briefings (VIPs, allergies, menu changes, targets), assign sections, and supervise pacing and service sequence.

• Guest experience: Greet and seat guests, recommend food and beverage pairings, personally look after VIPs, and resolve complaints discreetly and promptly.

• Standards: Ensure tables, linen, glassware and cutlery meet fine dining standards, and oversee correct tableside and beverage service.

Drive upselling of premium items, wines, cocktails and set menus to meet spend and revenue targets.

• Training: Coach and mentor waiters in etiquette, product knowledge and guest engagement, with regular tastings and feedback.

• Coordination: Liaise with kitchen and bar on timing, allergens and special requests, and support rosters, stock and incident reporting.

• Compliance: Follow ADAFSA, HACCP and allergen rules, and responsible alcohol service and age verification where applicable.

Requirements

• 3 to 5 years' restaurant experience, including 1 to 2 years as Head Waiter, Captain or Senior Waiter in fine dining, a 5-star hotel or a luxury lounge

• Strong knowledge of fine dining protocols; good wine, spirits and cocktail knowledge

• Proven leadership and training ability under pressure

• Fluent English; Arabic is an additional advantage.
